Corn Curry
Corn curry - a dish that I make only so often, but every time I do, it's a hit. I made this last night on a whim. I saw a can of tinned corn cobs sitting in the pantry, untouched for the past few weeks. I thought I'd make this to go along with the vaal-papdi and eggplant curry, daal, and chapatis for dinner. Here's the recipe:
Ingredients:
Corn on the cobs-boiled in salted water, or you can use canned ones like I did.
3 tbsp-crushed tomatoes, 1/2 cup roasted peanuts - powdered, 1- medium onion, garlic, cilantro, jalapeno, turmeric, salt, sugar, garam masala, jeera seeds, dhania powder, Oil for tempering.
Heat oil in a pan, add jeera seeds, onions, garlic, jalapeƱos. Saute till golden brown. Add the tomato paste and the roasted peanut powder. Stir until a nice aroma wafts from the mixture. Add some water, and all the spices. Taste and adjust accordingly. Add the cut corn on the cobs, stir and cover and cook on medium heat till all the spices and flavors come together, Garnish with cilantro and serve hot.
That's about it! A delicious side dish is ready for your meal.

ReplyDeletecorn curry looks delicious..never tried to cook with corn..only I do always is boil them with little salt and pepper(optional) and have them hot.In india, well we all know butta..that too hot from stove I love that in cold season.I will ur version some time .Thanks for sharing:-)
hey Trupti, I normally make baby corn curry with tomato-cream based gravy but never tried corn with peanut gravy.
ReplyDeletealso wanted to ask you about the dhania-jeera you seem to use a lot in your cooking. Do you get it ready made or how can I prepare it at home ? I had to make the daal-dhokli and broccoli-methi without it :-(
I've not used corn on the cob in curries or anything else, for that matter! I make curries and bhaji from just corn though. Looks good, Trupti! I just posted a corn recipe today-corn and black bean salad.

NZ: Hi! Yes, I get the dhania-jeera in packets from Indian stores, or you can buy the dhania and jeera powders and mix them in equal parts, they are an essential ingredient in Gujarati cooking...Hope you try this curry sometime.
Vani: yeah, this is a nice one to make as a side dish...too heavy to eat on its own, will check out your recipe.

Thanks for visiting my blog Trupti. The Broccoli-methi curry turned slightly bitter - don't know if I did something wrong or is it supposed to taste like that. Anyways, I added some yogurt to neutralise it and it was yummmmm !

Seen your receipe Corn curry. It really looks yummy. could you please tell me if the whole corn can be eaten or you need to eat the outer part and discard the inner part.

Hemlata: the inner part needs to be discarded because its not edible,as an option, you can make this curry out of either tinned or frozen corn without the cobs. Do try it, its a delicious side dish to any meal.
