Lapsi is a favorite of mine to offer as a "prasad". It is also made on auspicious occasions such as a birthday, anniversary or when starting a new business or moving into a new home. There are two different ways of making this delicious Lapsi, some add water and jaggery, while others add milk and sugar. I prefer to add milk and sugar. Here is the recipe, please note that these measurements are not accurate, but are just guidelines.
You will need: 1 cup broken wheat, or known as "Lapsi Fada"-available at any Indian grocery stores, 1.5 cups milk, sugar to taste-depending on how sweet you like it, cardamom, Almonds, Pistachios, Ghee.
Toast the almond and pistachios in the microwave until they turn a golden brown, around 50 seconds and cut into small pieces. Set a small number aside for garnish. Toasting them gives it more flavour in the desserts, I have found. Meanwhile, in a small saucepan, heat the ghee and add cardamom powder to it to bring out the aromas. Add the Lapsi fada and toast until the lapsi is golden brown. Now add the sugar and almonds and pistachios. Add the milk slowly while stirring. Keep on stirring to avoid any lumps. Lower the heat and cover and let it cook until the Lapsi is thoroughly cooked. If you're in a hurry, you can also put this in a small pressure cooker,just be careful not to burn it. I have found that the more milk you add to this, the softer and creamier it will be. If the mixture looks dry, add more milk and adjust the sugar. Once done, garnish with grated almonds and pistachios. Serve warm. This is also very healthy for the kids and adults alike.

I love it. and you presented it here so nicely. specially this fada lapsi i love the most. though i dont have sweet tooth but i like Lapsi rather than any other very sweet tasting desert. that's it - it's milk ! I bought this broken wheat the other day and tried to recollect the way mum used to make lapsi. It tasted good, but now I know what was missing - milk. I added water instead ! ( but it wasn't bad ) anyway, will soon make it with milk.
