Nankhatai is one cookie I am fond of, not only is it eggless, but very simple to make. I have my own version though. Instead of pure desi ghee, I used unsalted melted butter.
I made these without the cardamom this time, my kids like them plain, and rolled in some turbinado sugar.
Try dunking these in Chai the next time around....it's a perfect tea-time snack.
Here is what you will need:
- 1 cup- All purpose flour
- 1 tsp- Baking powder
- 1/2 cup - Melted unsalted butter (use desi ghee, if you like)
- 1/2 cup - Powdered Sugar
- 1 tsp - Pure Vanilla Extract
- 3 tbsp- Turbinado Sugar to roll the cookies in(optional)
For a Desi Variation: Use Ghee in place of butter, Wheat flour in place of All-purpose flour, add a teaspoon of Cardamom powder, a teaspoon of Saffron, and about 2-3 tbsps of Pistachio powder in the flour mix.
Bake at 375F for around 20-25 minutes until golden. Enjoy them while hot as is, or dunked in some hot tea or coffee! The taste is wonderful....light, airy and buttery-perfect egg less indulgence.

Trupti, Nan Katai was the first sweet I tried all by myself and you can hardly go wrong with this traditional recipe isn't it? I loved the way you shaped them and I have never tried using vanilla to this. Thanx for sharing.

hey, loved your nankhatai. It is such a simple process to get such good results, right! mara naniji bau swad nankhatai banavta hata, as kids we used to sit in the kitchen & watch her make it. amey oven khulwani vaat jota hata kay kyare nankhatai taste kariye.

I also made Tuvar Daal but I do not use kokum but I taste with kokum it is really very tasty. Good recipe of Tuver Lilva with eggplant.

ReplyDeleteOne query... when i made nankhatai, i used melted buter and the cookies were a sad mess,the results were good with softened butter, so... my qtn. is do u melt the butter, let it cool and use or take it out of the microwave and use it when warm?
Nice twist to the nan katai. Flat round shapes makes them look very different. I make my nan katai with wheat flour(Indian atta)

ReplyDeleteMallugirl: I think you can add jeera, but halve the amount of sugar, add a tbsp of salt to balance out the sweetness.
Manasi: yes, let the butter come to room temp. I melted it beforehand while I assembled all the ingredients...and it was ready to be used by then. Stirring it while the mixture becomes really frothy also helps to bring it to proper temperature.
