Weekend Lunch Series: Curried Spaghetti Toss

I'm back to posting!

All's well, I'm happy to say.....so on with the blogging, I'll be visiting all your sites soon! Thanks so much for your kind comments and concerns!

Here is a great Lunch recipe for the weekend, a curried Spaghetti toss.....made simply with some tomatoes, onions and green peppers and some spices.....serve this with some Garlic bread, and you have a full meal at hand.

  • Here is the recipe:

2 fistfuls of Spaghetti- for each person, Salt,Olive oil - Cook the Spaghetti according to package directions, or take the easy way out, Like me, Use a pressure cooker...steam for 2 whistles, and it's done! Drain and set aside.

For the Spices and Tempering:

1 tbsp - Olive or any cooking oil

1 large onion - chopped

1 large green pepper - chopped, 1 large Jalapeno pepper- chopped

3 large tomatoes - chopped - you can also use Canned ones

1 tsp- Jeera (cumin) seeds

1 tsp- Dhania-Jeera Powder

Salt, A pinch of sugar to taste.

Heat some oil in a pan. Add the Cumin seeds, when they turn dark brown, add the onions and the peppers. Stir until they turn translucent. Now add the tomatoes. Stir for 5 minutes more. Add the cooked spaghetti now. Give it a gentle toss and add the spices. Stir until nicely coated, adjust seasonings and serve hot with some garlic bread. Enjoy!
