Sambharo is nothing more than a few veggies sauteed in Oil, Mustard seeds and turmeric......it is an accompaniment to the main meal, and is quite like a warm salad.
I make this Sambharo quite often, with an array of veggies, sometimes using just carrots and bell peppers, other times, shredded green Papaya and Chilies, red Cabbage and beets, Carrots and Chilies, Carrots and Cabbage....or my favorite, and the typical Gujarati combination of Green Cabbage, Bell peppers and Carrots.
This typical dish is found in many Gujarati thalis.......try this the next time for a healthy alternative to the cold green salads.
Here is the recipe:
- 1 Cup: Green Cabbage -chopped
- 1 Large Bell pepper: Chopped
- 1 large Carrot: Chopped
- 1/2 tbsp: Corn Oil
- Mustard Seeds, Turmeric, Asafoetida, Salt, A pinch of sugar - to taste
You want to leave these veggies crunchy, and not too soft. Add the Seasonings, give it a stir and remove from heat.
This is delicious with some Chapatis and Yogurt,and a gravy based Sabzi.

ReplyDeletea very nice variation to the normal salads. are the vegetables left to stay crunchy? can one also add some green chillies? and pls. do tell us how to make it with shredded green papaya. i've never used this in my cooking tho' i see them a lot at the asian grocery. thanks for sharing traditional recipes with us, Trupti!

ReplyDeleteI have Cabbage stir fry like that and tastes great with chapatis.We just call it Cabbage palya.Sambaro sounds good.Simple and delicious entry.

Just one suggestion, never fry cabbage family of vegetables (that includes cauliflower, cabbage and broccoli) Frying destroys nutrients reposible for cancer prevention, instead you could micrwave them. Max 2 minutes frying has shown to retain the nutrients, anything more than that renders your vegetables practically grass.

looks colourful .. sometimes I make palyas with cabbage, carrot and green beans. Warm salad is a wonderful idea.
