Summer Parties: Mediterranean,Vegetable and Fresh Fruit Platters......



Sunday morning, Jodi and I made some fruit, vegetable and Mediterranean platters for a party later on in the day. It took us around two hours to assemble all of these gorgeous, healthy platters!

For the vegetable platter: We used Romaine Lettuce to line the platter, topped off with Cherry Tomatoes, Broccoli, Celery, Carrots, Cauliflower and Cucumbers. We used Low fat Ranch, Cesar and a Creamy Italian Dip in green Pepper bowls.

For the Mediterranean Platter: We cut Pita breads in triangles, sprinkled it with some Olive Oil, salt and some Greek seasoning and baked them at 400F until crispy. For the dips, we used Tzatziki, Salsa and Hummus in the colorful yellow, orange and red bell pepper cups.

For the Fruit Platter:We used fresh Watermelons, Oranges, red and green Grapes, Honeydew, Kiwis, and Cantaloupe with a Fresh Strawberry yogurt dip in the middle. We also had a Raspberry Yogurt on the side for a different flavor.
