Jhatpat Samosas


These past few days have been such a blur....I am busy spring cleaning the entire house, running errands, being a soccer and a Taekwondo mom....and not to mention cooking for the four of us....so on days like these...Jhatpat food comes to my rescue...and that's exactly what this is- quick and yummy.
I used the medium sized tortillas as a base for these samosas....the filling is very simple - just plain potatoes and peas, but I made the filling-Gujju style using mostly green masalas, try my version and see for yourself.


Recipe:

Note: Amount of potatoes and peas are just guidelines, use according to your family size and appetite! Just remember to adjust the seasonings accordingly.
  • 1 packet of medium sized tortillas - Don't use the small or large ones...the medium size works the best.
  • 4-large potatoes, boiled and cut into cubes
  • 1.5 cups- green peas
  • 1 large onion- chopped finely
  • 2 large jalapenos- use less if they are really hot- chopped
  • 1 large piece of ginger
  • 1 tbsp Fennel seeds (variyali)- roasted and powdered
  • 1 tbsp Coriander seeds - roasted and powdered coarsely
  • Handful of Cilantro leaves -chopped
  • Salt, Sugar, a pinch of turmeric, lemon juice to taste
  • Oil for frying, 1 tbsp- for sauteing the filling
  • 2tbsp-all purpose flour and some water to make a thick paste to cover the edges of the tortilla.
Make the filling:
In a wide pan, heat some oil. Add the onions, jalapeno, ginger, fennel seeds and coriander seeds. Let the onions turn translucent. Add the potatoes and peas and the seasonings, adjust to your taste and let cool.

To fill the samosas:
Cut the tortilla down the middle.Form a cone and stuff the cavity with the cooled potato-pea mix. Seal the edges with the paste made from the all purpose flour and water and set aside. Cover with a slightly damp kitchen towel to make sure they don't dry out. See picture.

When they are all sealed,fry them on medium low heat till they are golden brown and crispy. Don't fry them on high heat,the tortillas will brown very quickly and leave an after taste. You can also bake these in the oven, just be sure to spray each of the samosas with a non-fat cooking spray,along with the baking sheet.

Serve hot with some garlic or cilantro chutney and enjoy!

  1. Trupti , what a innovative idea..you have made Samosa making so easy..otherwise to knead the Maida and all....and all those samosa lined up in the baking tary looks like little soldiers ready to sacrifice to a growling tummy...lovely presentation..

    Also, its nice you extended the deadline as I am still trying to convince my husband to cook something....:-)

    I feel like trying the same with left over phulkas :)
    Hope I get the same taste with phulkas .The tortillas look white are they made with maida ?
    I liked the recipe for potato filling I will make this for sure :)

  11. I use Tortillas too and Phyllo dough!!:))You can also use Spinach or Tomato flavored Tortillas,makes them colorful.I bet kids loved them.I have 2 birthdays coming this week and a party on Sat.Busy busy!!

    u have extended the deadline for winter food swing? u should call them spring food swing then;)

    Anon: you can bake them at 325, place on an aluminum foiled baking sheet, spray with non-fat cooking spray, put the samosas and spay those lightly...be careful though, they burn very easily.

    You know how back home when a friend makes you some food, the container is never returned empty :). Having tried your recipe this weekend and having loved it, i am filling up the "dibba" with this recipe for methi-zucchini sabzi :).

    I am not much of a zucchini and related sabzis' lover ;). But then i believe there's a way to make each thing enjoyable-here's a sample of whats really worked for me.....

    Heat oil in a cooking pan-splutter jeera and then fry finely chopped onions till golden brown-now add chopped tomatoes (big cubes: one big tomato is enough) and saute more. Add haldi, mirchi and chopped methi leaves. Stir to mix and then add zucchini cubes (i made small cubes). I used two small bunches of methi: two regular sized zucchinis. Mix and cook on low heat-stir in between. Half-way through, add chopped long red peppers (this gives the dish a very colorful look). I know you love Jalapenos, Trupti :). The red peppers i used aren't very hot. Pick up any "not-green" mirchi you like, even bell pepper! Finally, add a tiny pinch of garam masala and enjoy with paranthas. Try this recipe replacing methi with palak and/or zucchini with doodhi-equally good. Its a fun eat for winters. The combination works because methi and palak, especially the former are very flavorful leaves and they balance out zucchini/doodhi well. Hope you like it.

    whenever i try samosas, they become quite soggy not as crispy as they should be but u made it look so simple and easy!!!
