Gujarati Series: Pooris and Milky Fruit Salad


My two favorite items together, Milky, Vanilla flavored Fruit salad and Pooris.......give me these two together, and there is no need for anything else!

I made this on Monday especially for my grandmother who came from India last week. Since this would be her first time visiting my home after I got married, I wanted to make something special....along with this, I made the typical Gujarati fare: Kadhi, Tuver-Lilva and Eggplant Shaak, Varoda ( recipe coming next week), and rice with the usual papads and pickles.

Here is what you need to make this Summer favorite of mine......


Ingredients:
  • 1 Liter- Whole Milk
  • 1/2 cup- Extra Milk
  • 2.5 tbsp- Custard powder ( I used Vanilla Flavored one)
  • Sugar - to your taste
  • Mixed fruits: I used apples, grapes, Chiku (sapota), Pomegranates, and bananas
  • 1 tsp: Cardamom powder
  • A handful of roasted almonds and Pistachios
  • A pinch of saffron- crushed
  • 1 tsp: Pure Vanilla Extract
In a deep pan, boil the milk and the sugar for around 20-25 minutes, stirring constantly. In a separate bowl,mix the cold milk and the custard powder together until smooth. After the milk has boiled, add this mixture slowly, stirring all the way. Keep this mixture on the heat for around 7-10 minutes more. Add the Vanilla extract now and stir. Remove from heat after the 10 minutes and let it cool completely.



Meanwhile, cut the fresh fruits into small pieces, roast the almonds and pistachios in the microwave till lightly browned. Add the cut up fruits, and nuts along with the saffron, and cardamom powder to the cooled milk.



Let the milk cool completely before serving. Enjoy with pooris or on its own as a refreshing Summer drink!

  1. WAH!!!! my favourite too!!!!! I made fruit salad and poori as well last week for some guests from India! :) I can consume gallons and gallons of this..... but prefer it without the custard. :)

  2. I have seen North K'takites eat Poories with Halwa and Sweet Shrikhand.I somehow could never come to terms with that.I love Poories and Salad but separately.
    Fruit salad looks delicious.Chilled for a summer day,YUM!

  5. It must be so nice that your grandma is visiting. I would love to have my Nani come here, but she is not in ver good health to travel such a long distance.

    Never tried having pooris with fruit salad. I love fruit salad too very much. Summer...yeah- fruit salad has to be in my fridge most of the time. Love it.

  13. The fruit salad was reminiscent to what I used to eat in Ahmedabad.
    Oh wish I could go back in time.
    Fruit salad, fruit matho and doodh-pak was the only three things I used to like in sweet stuff. It was really a down memory lane experience to see your recipe.
    I usually make Fruit Salad without the custard. Because I don't like that cornstarchy taste. I prefer using 2 cups of regular milk, 1 can of evaporated milk and 1 cup of half and half. I boil all the milk together and then add vanilla essence and then after it cools down I add all the fruits. I add canned peaches, mangoes,etc depending on the mood.

  17. I'd love to have puris with a spiy something and finish of with the fruit salad! Btw, do you need to add vanilla extract again since the custard is already vanilla flavoured?

    Foodie: This doesn't have that cornstarch flavor at all...its actually quite good, but I like your recipe! I should make it that way the next time.

    Jyothsna: I added the extra Vanilla because I love its flavor...you can skip it if you'd like.. :)

  23. Milk with poori is my favorite Trupti. I regularly prepare lighter version of our Pal Poli. With fruits its really tempting. Nice post. Viji

    I see that Richa beat me to complimenting you on the bowl :) Mane bhi khubaj gamey chhe...I love how the eye shaped bowl is surrounded by the perfectly puffed pooris...
    I can imagine dipping the pooris and eating them, and then eating the fruit with a spoon, and then slurping the remaining milk/custard from the pointed end of the bowl without making an unholy mess (and creating a 'milk moochh' or a 'milk daadhi'...
    Hmm...strangely, I can smell and taste everything!! I guess thats how good your photos were :)
