Zucchini Ravaiya ( Stuffed Zucchini Curry)

Zucchini, probably the most boring vegetable out there. I am trying to come up with new recipes for it though because here, we don't have much choice in vegetables...so, you take what you get and make the best of it. I bought the zucchini last week, hoping to make handvoh with it, but then decided to make zucchini ravaiya out of it..mainly because I am tired of eating frozen Indian veggies. Here's how I made this yummy dish....
You will need: 5 small zucchinis, 1 tomato, 1/2 cup besan(chickpea) flour, 1 tbsp-dhania-jeera, 1 tsp turmeric, chili powder, curry powder,salt sugar, 2 cloves of shredded garlic. Oil, Jeera, hing for the tempering.

Chop the zucchini as shown above and make slits in the middle, taking care not to split it entirely. Mix the besan,dhani-jeera powder,turmeric, chili powder,salt and sugar, garam masala together. Stuff this mixture between the zucchini and set aside for atleast 20-30 minutes.

When ready to cook, heat oil in a flat saucepan, add jeera and hing. Add the zucchini now and cover and cook for 5 minutes. After 5 minutes, add the tomato and the shredded garlic. Add some water if you'd like a thinner gravy. Cover and let cook-about 15 minutes or so. Serve hot with chapatis or rice.
This curry is so yummy, despite the bland flavor of the zucchini. It is now a regular in my home and goes perfectly with anything. I hope you will make this for your family! Here is another picture. I paired this with chapatis, mung daal, rice, yogurt,pickles for a complete gujju meal.

Same here same here. I am soooo bored of using the frozen veggies - being vegetarians it's so difficult to decide the menu with limited fresh veges.

NEver knew what to do with Zucchini except for using it in Pasta sometimes. Oh, thanks for sharing this recipie and next time Zucchini will be in my shopping trolley !

BTW, I am going to try your Broccoli-methi today and will let you know how it turned out !!

Truptiben...~pondering~...yep zucchini is boring but you have made think again. Maybe i should try it. I know about the frozen veggies issue. Luckly things have changed here in the UK. One can now buy most indian veggies which are really fresh....peace...~smile~
